Rename the placeholder org from some-other-org to contoso-labs and swap
the mock identity emails for admin@example.com.

Also guard the exported authorize query fetchers behind USE_MOCKS, matching
the approve/deny mutations. The hooks already gated via `enabled`, but the
fetchers returned mock data when called directly.
