Pretty simple change, we are still referencing legacy service role API keys in the docs. This only updates to reference the current preferred solution with secret API keys

- GFM automatically wraps emails in angle brackets, which subsequently
breaks MDX because it expects anything wrapped in angle brackets to be a
JSX tag
- toMarkdown inserts sentinel comments between certain blocks, which
subsequently breaks MDX for the same reason

We use the quota term for actual billing quotas, so using "Quota" as a term for configurable Realtime limits is confusing. While there are varying per-plan limits, they are not used for billing. Realtime Quotas on plans refer to Realtime Messages and Realtime Peak Connections
